Rapid freezing with high efficiency to preserve potato quality. The cooling tunnel (stun chamber) is one of the most important stages in the frozen French fries production line. It quickly reduces the potato temperature from 5Β°C to -30Β°C, helping to preserve texture and flavor while preventing the formation of large ice crystals that could affect quality.
